Job Description
We are looking for a Canteen Contract Manager based in Pretoria or nearby areas. The candidate must have a strong knowledge of food and kitchen management procedures. The candidate must also have a diverse knowledge of the preparation of standard menus daily.The candidate must also possess ample administrative knowledge and experience in running a canteen site.
Qualifications and Experience- Qualification in Culinary Arts (Diploma).
- 5+ years’ Site Management experience working in a corporate canteen or similar roles.
- Bold and decisive managerial skills.
- At least 4 years’ experience in daily mass catering (at least 200 people) maintaining quality.
- SHEQ experience and qualifications will be an added advantage.
- Manage stock and placing orders for the same.
- Weekly reporting of inventory management, site related development issues and growth.
- Organizing, leading, motivating the staff and identifying the needs of the staff.
- Assisting with ad-hoc food service requirements as and when the need arises.
- Plan staff shifts and roasters.
- Maintaining food costing records.
- Ensuring portion control is adhered to daily.
- Drafting and preparing weekly menus in conjunction with the chef according to the requirements of the site.
- Drafting and preparing daily menus for special catering functions and ensuring adherence in preparation.
- Ensure compliance with the contract by monitoring the daily conduct of the staff, the company and the client and preparing recommendations of the same.
- Ensure health and safety regulations and site related compliance are strictly observed.
- Monitor the quality of the products and service provided.
- Keep financial and administrative records.
- Recruit and train staff.
- Forge strategic partnerships and relationships with clients, the Supervisor on site and suppliers.
- Ensure compliance with all fire, food regulations, health and safety, and employment regulations.
- Ensuring thorough implementation of the company’s operational and food safety procedures.
